ISO/NP 20861 Sensory Analysis — General guidance on ethical and safe practices

Scope

This document provides guidance on ethical and safe considerations and practices when carrying out sensory analysis on products, materials and ingredients.

This document covers:

• Sensory testing facilities and environments.

• Sensory testing programmes.

• Sensory tests.

• Sensory testing with panels who participate on a regular basis.

• Sensory testing programmes.

• Sensory training courses and practical demonstrations.

• Sensory analysis applied in research, development, quality assurance and quality control and marketing research.

• Food and non-food products.

The considerations may be applied in sensory judging, competitions and organised tastings.

This document does not cover:

• Pharmaceutical and medically-prescribed products.

• Large scale market research studies and techniques for large-scale surveys.

• Studies that require additional, specific ethical considerations.

Purpose

Sensory analysis is widely used in food and non-food industries for product research, development, quality assurance and control, and marketing research. It is also used by academic institutes to conduct sensory research. Many research agencies specialise in sensory analysis. Sensory analysis uses human subjects to objectively measure sensory properties of products, ingredients and materials. The rights, safety and well-being of test participants are of paramount importance. It is essential that sensory testing is ethical and safe. Although there is general and clinical guidance on human subject testing, there are no international standards specifically addressing sensory analysis, which involves direct exposure and often ingestion of samples. End-users of this document will have guidance on how to conduct ethical and safe sensory testing, which will help them minimise risks to test participants and employees, and maintain a good company reputation by lowering the risk of adverse incidents related to testing. An international standard will help companies, academic institutes, agencies and researchers to standardise ethical and safety considerations and practices across testing sites and studies in different countries
