This document applies to electric professional combination ovens.
These appliances are used in professional kitchens, such as restaurants, canteens, hospitals and in businesses such as bakeries, butcher shops.
This document does not apply to:
appliances that exclusively perform re-thermalizing processes;
pizza ovens;
appliances designed exclusively for industrial purposes.
The purpose is to define the principal performance characteristics of electric professional combination ovens and to describe the standard methods for measuring these characteristics.
This document does not deal with safety, food quality and minimum performance requirements.
So far, no deliverable is identified which covers the relevant criteria and measurements necessary to guarantee a repeatable, reproducible and reliable test for commercial cooking appliances.
Standard EN 60350-1 deals with relevant performance criteria for household cooking appliances. In the framework of eco-design, commercial cooking appliances have been considered for regulation several times.
In the European preparatory study for the revision of the regulation for household cooking appliances, the commercial cooking appliances are considered to have a high savings potential.
