Scope

This document gives guidance for the production and hygiene of dry-cured ham and establishes a system of analytical methods to ensure the quality of dry-cured ham. It also establishes specifications for transport, storage, packaging and labelling of dry-cured ham.

This document is applicable to dry-cured ham and non-ready-to-eat dry-cured ham. It is also applicable to dry-cured ham production.
